Citrus Magic.

8 animals. EIGHT. That is how many I have living in my house. I know, I know, I know. Trust me. 4 Chihuahuas and 4 feral/stray cats, 2 of which are my pets, they have been tamed and are lovely. The other 2 strays are still in ‘taming’ mode and hopefully will be adopted out over the next couple of months.

No, I am not a hoarder, just a woman who is going broke from kitty litter, one who cannot say no, or close my door to an animal in need. Seriously, I have tried, then I lay awake at night. I like my sleep so it is easier for me to just let them all in my house and then take it from there.

Needless to say, I clean, a lot. All the time. Cleaning everyday, that is the trick to having a clean animal hostel. Never let your hostel get so dirty that it cannot be cleaned in under 2 hours ๐Ÿ˜‰ This is where cleaning products like Citrus Magic come into my life and make it a little bit easier. Citrus Magic is an all natural, cruelty-free line of cleaning products that relies on the power of natural citrus oils to get your life clean.

I can say 1000% that everything they make works. I am currently using their ‘Citrus Magic All Purpose Cleaner’ spray for around the house and also a nice, huge solid air freshener for my basement where the 3 litter boxes are. They also make a line of products strictly for pets, the huge Citrus magic ‘Solid Air Freshener’ I rock is part of their ‘pet care’ line.

Citrus Magic can be found at Whole Foods, Target, Walmart, KMart, Wild Oats Marketplace and Aubuchon Hardware, as far as chain stores go. I have also purchased them, at where else, T.J. Maxx and Marshall’s.

There is really no reason to use chemical cleaners that have been tested on animals these days, there are natural, cruelty-free alternatives to every cleaning product and dare I say that most work better than their chemically counterparts.

Quorn Garlic & Herb Chik’n Cutlets.

As with all things in life, I am super picky about my faux meats. I find the Quorn makes some of the best ones but unfortunately they are not vegan, but only vegetarian. The texture and taste of all of their products are some of the best in the game, so of course their Garlic & Herb Chick’n Cutlets follow suit.

This is probably one of the best mock products I ever had. All around I thought it was great, the taste, texture and consistency. The breading was nice, with a great taste and of course they are super easy to make. 25 minutes in the oven and you have dinner. There is only 210 calories per serving and with that you get 14 grams of protein and 4 grams of fiber.

As stated the only downfall of this delicious product is that it is not vegan but Quorn has gotten on the vegan train, so I suspect we will see these in vegan form in the near future. As with all Quorn products, they are soy free and all natural. Peep them below…

I chose this book, Vegetarian Cooking For Everyone as this months ‘Read This’ selection because although this is a ‘vegetarian cookbook’ it is not specifically for vegetarians only. Most of the reviews of this book are by meat eaters so I thought that was interesting enough, maybe this cook book will be the one to turn you all into vegetarians lol. The dishes Ms. Madison teaches us are healthy, nutritious and filling. This is not a low-fat cook book, this is more of a whole foods cook book. Many of these dishes would make great side dishes if you are still a meat eater and overall this cook book just teaches you how to prepare and present, good looking, good-for-you vegetarian dishes. Most of the recipes are vegan but the cook book is not a vegan cook book. Vegans are so crafty that they have replacements for everything anyways so I know they could navigate this book with the greatest of ease.

Vegetarian Cooking For Everyone truly is for everyone. There are no crazy ingredients needed, no trips to specialty markets to buy $20 spices and rare grains. That to me is always the ‘Achilles Heel’ of veg cooking, all the random ingredients you will use for one dish and never use again, hard to find, uber expensive and and overall pain inย  the butt. Who wants to deal with all that at 8pm on a Wednesday? Didn’t think so. But being short on time and patience is no excuse to not eat well. With cook books like Vegetarian Cooking For Everyone, 3o Minute Vegan and Appetite For Reduction, cooking is made easy yet healthy. Not to mention, Vegetarian Cooking For Everyone manages to pack 1,400 recipes into it pages so you will never run out of things to try ๐Ÿ™‚

Recipe Time: Butternut Squash Risotto.

If you love butternut squash as much as I do then you have got to try this recipe. The overall task will take about an hour and this particular recipe serves 6 people. This dish is high in fiber, 8 grams and also has 7 grams of protein in it. At about 350 calories all of the 8 grams of fat in this dish are of the poly and mono forms so you are good to go. Vegetarian as is, this dish can easily be made vegan by omitting the butter and cheese or by simply using vegan friendly products instead of the dairy ones. Enjoy!!!

Butternut Squash Risotto.

Ingredients:

– 4 Cups Vegetable Broth.

– 2 Cups Water.

– 2 1/2 Tablespoons Olive Oil, Divided.

– 1 Butternut Squash, About 3 Lbs. Peeled, Seeded and Cut Into 1/2 Inch Cubes.

– 1 Teaspoon Of Salt, Divided.

– 1/4 Teaspoon Ground Pepper.

– 1/2 Tablespoon Thyme Leaves.

– 1 Medium Onion, Finely Chopped.

– 1 1/2 Cups Arborio Rice.

– 1/2 Cup Dry White Wine.

– 1 Tablespoon Unsalted Butter.

– 1/4 Cup Finely Grated Parmigiano-Reggiano Cheese.

Directions:

Bring Broth And Water To A Simmer In A Saucepan.

-Heat 1 Tablespoon Olive Oil In A NonStick Skillet Over Medium-High Heat. Cook Squash With 1/2 Teaspoon Salt and 1/4 Teaspoon Pepper, Stirring Occasionally, Until Golden In Spots. About 10 Minutes. Stir In Thyme. Add 1/2 Cup Broth Mixture To Skillet, Reduce The Heat and Cook Stirring Occasionally, Until The Squash Is Tender And The Broth Is Evaporated. About 10 More Minutes. Remove From The Heat And Set Aside.

– Meanwhile In a 4 Quart Heavy Pot Over Medium Heat, Cook The Onion In The Remaining 1 1/2 Tablespoons Of Oil With The Remaining 1/2 Teaspoon Of Salt, Stirring Until Softened, About 5 Minutes. Add The Rice And Toss To Coat With The Oil. Cook For 2 Minutes. Add The Wine And Cook Until Almost Totally Absorbed, About 3 Minutes More.

– Stir In 1/2 Cup Simmering Broth Into Rice And Cook At A Strong Simmer, Stirring Constantly And Letting Each Addition Be Absorbed Before Adding More, Until The Rice Is Creamy Looking But Still Al Dente. This Should Take About 20 Minutes Total. The Mixture Should Be The Consistency Of Thick Soup.

– Stir In The Butter, Cheese And Reserved Squash and Serve Immediately.

They show you how to use Mom’s biscuit mix to make cinnamon buns, tell you the best way to prepare french toast and give you the 4-1-1 on many comfort foods vegan style.

Mom’s mixes can be found at select Whole Foods Markets in the Portland area and in smaller health and vegan stores across The States. You can also find them on-line, so snoop around and see what you come up with. When it comes to eating vegan sometimes its the prep work that scares people off and makes them say ‘forget it’ but with Mom’s most of the prep work is done and you are just left to do the bare minimum. Awesome.ย  These mixes are also great for people with egg or dairy allergies and they are also all natural and gluten-free.
