5 Benefits Of Dark Chocolate.

Have you ever read the nutrition information on a piece of dark chocolate? If not, just for kicks, do so next time.

Dark chocolate is FULL of health benefits, just one scan of a nutrition label will show you a crazy amounts of both iron and fiber. But one dig deeper and this is what we discover…

1- Dark Chocolate is a Powerful Source of Antioxidants. As we all know antioxidants are super important to our bodies.The antioxidants in dark chocolate fight all the free radicals which systematically destroy our bodies. Dark chocolate is loaded with organic compounds that are biologically active and function as antioxidants. These include polyphenols, flavanols, catechins, among others.

2- Dark Chocolate May Protect Your Skin Against The Sun. The flavonols in dark chocolate can protect against sun-induced damage, improve blood flow to the skin and increase skin density and hydration.

3- Dark Chocolate May Improve Brain Function. One study of healthy volunteers showed that 5 days of consuming high-flavanol cocoa improved blood flow to the brain. Cocoa may also significantly improve cognitive function in elderly people with mental impairment. It also improves verbal fluency and several risk factors for disease.

4- Dark Chocolate May Lower The Risk Of Cardiovascular Disease. In a study of 470 elderly men, cocoa was found to reduce the risk of cardiovascular death by a whopping 50% over a 15 year period. Another study revealed that eating chocolate 2 or more times per week lowered the risk of having calcified plaque in the arteries by 32%. Eating chocolate less frequently had no effect.Yet another study showed that chocolate 5+ times per week lowered the risk of cardiovascular disease by 57%.

5- Dark Chocolate Is Very Nutritious. 100 grams of 70-85% dark chocolate has 11 grams of fiber, 67% of your daily Iron needs, 58% of your daily Magnesium, 89% of your daily Copper needs, 98% of your daily Manganese and lots of potassium, phosphorus, zinc and selenium. All of these things are crazy good for your skin. Hint Hint ๐Ÿ™‚

So there you have it. Dark chocolate is not just good, it is really good for you.

Pro Bar Meal.

I have a major soft spot for meal replacement bars. I am ‘on the go’ quite a bit and eat all day to top it off so meal replacement bars are a staple in my purse and car. Now finding a high quality, great tasting meal replacement bar is a whole other issue, and a vegan one at that? Good luck.

Pasta Martelli.

I am so not ashamed of my love for pasta. And no I am not talking whole wheat, spelt or even sprouted. I am talking bronze plates, cold water and Italy. That’s how I roll and that is why I am in love with Martelli’s Pasta or Pasta Martelli.

Owned and operated by the Martelli Family, only family members work in their pasta factory. Making their amazing pasta is a long process, it is slowly kneaded in cold water, using only the best Durham wheats. They then dry the pasta at low temperatures for about 50 hours. The result is a perfectly ‘rough’ pasta that allows maximum sauce stickage and a great toothy but not too al dente bite.

As for scoring some Martelli’s, I randomly found their pasta at TJ Maxx or maybe Marshalls. My food finds are always so random, I apologize. After much searching on the inter webs, I did find a place on line where you can order from. I have a link attached below. Their packaging is bright yellow so keep your eyes peeled next time you are out and about in a place that sells pasta. Or if you find yourself in Italy, you can contact the family for a tour of the factory and a couple bags of their penne. Whatever is easiest ๐Ÿ˜‰

Recipe Time: Mushroom And Pinto Bean Veggie Burgers.

People love using mushrooms as a meat replacement because once they are cooked they provide a similar a taste and texture. This recipe uses mushrooms and pinto beans as the base of the burger and all can be said and done in 30 minutes or less. There are 200 calories per veggie burger, 8 grams of protein, 6 grams of fiber, they are gluten- free and vegan as well.

Mushroom And Pinto Bean Veggie Burgers.

Ingredients:

1/2 Onion, Diced.

1/2 Clove Garlic, Minced.

1 Tablespoon Olive Oil

1 1/2 Green Onions, Diced.

1 Teaspoon Cumin.

1/4 Cup Fresh Mushrooms, Diced.

1 Cup Pinto Beans.

1/2 Teaspoon Parsley.

Salt And Pepper To Taste.

4 Tablespoons Of Olive Oil For Frying.

Directions:

– Saute the onions and garlic in olive oil for 3-5 minutes, until the onions are soft.

– Add the green onions, cumin and mushrooms and cook for 5 minutes, until mushrooms are cooked. Set aside.

– Drain the beans and mash them with a fork or process in a food processor until well mashed.

– Add the mushrooms to the beans as well as the parsley, salt and pepper. Stir until well combined.

– Shape the mixture into 2 patties and heat the olive oil in a non stick skillet.

– Cook each side for 3-4 minutes and serve immediately.

Raw Revolution.

My latest adventure in food/protein bars are Raw Revolution bars. These whole food bars are raw, organic, vegan, peanut free, Kosher and gluten free. They offer up a nice dose of protein and fiber and surprisingly, they taste great. I say surprisingly because let’s be real, lots of food bars just taste NAST. Add the whole raw factor and many people will be turned off but honestly, 99% of the raw things I try are awesome so I am glad raw Revolution kept up with the other ‘Raw Jones’.

Raw Revolution was created by a Registered Nurse/Whole Foods Chef, Alice Benedetto. She wanted to offer an alternative to sugary junk food and other not so desirable treats that we all reach for when we are on the go. Mission Accomplished. I must say she did a great job at developing this product, she came up with tons of flavors such as; Almond Butter Cup, Coconut Delight and Heavenly Hazelnut Chocolate. Yum. Yum. Yum. I personally chomped away on the Coconut Delight and found myself with a mouthful of raw coconut. Which to me is like having a mouthful of heaven.

Recipe Time: Easy Vegan Black Bean Burgers.

This is a super easy, super tasty recipe for black bean burgers. No eggs or egg re-placers needed, this burger is all natural and naturally vegan.ย  These burgers will take 30 minutes to prepare tops and don’t call for any crazy ingredients. Who says eating vegan is hard and expensive?

Easy Black Bean Burgers:

Ingredients:

1 Cup Black Beans

– 1/2 Cup Planko Bread Crumbs

– 1/4 Cup Finely Chopped Onions

– 1/4 Cup Finely Chopped Carrots

– 1/4ย  Cup Finely Chopped Mushrooms

– 2 Cloves Of Minced Garlic

– 2 Tablespoons Of Ketchup

– 2 Teaspoons Of Dijon Mustard

– 2 Teaspoons Ground Cumin

– 2 Teaspoons Ground Chili Powder

– 1/2 Teaspoon Salt

– Olive Oil Or Cooking Spray To Coat The Pan

Directions:

– Coat Frying Pan With Olive Oil Or Cooking Spray And Add Onions, Carrots and Mushrooms. Saute For 5 Minutes, Until Soft.

– Add Garlic And Stir For 30 Seconds.

– Add Ketchup, Mustard, Cumin, Chili Powder And Salt. Stir To Combine.

– Remove The Vegetables From The Heat And Seat Aside To Cool. Once They Are Cool Enough To Handle Toss Them Into A Food Processor And Add The Black Beans And The Planko Bread Crumbs.

– Pulse A Few Times To Combine.

– Remove From Food Processor And Form The Mixture Into 2 Large Patties. Place Them On A Foil Lined Baking Sheet And Lightly Coat Them With Olive Oil Or Cooking Spray So They Do Not Stick.

– Bake For 15 Minutes At 450 Degrees.

– Serve A Top A Whole Grain/Sprouted Grain Bun With Some Avocado And Sweet Potato On The Side.

Gosh I love snacks. I am a certified snacker. I have come to realize that I don’t really eat ‘meals’ anymore, I just straight up snack the day away. My car looks like a buffet and my purse has more food in it than anything else. Finding new vegan snacks is like a passion of mine and the latest treasure is a snack called Chick Pz. Anything with a ‘Z’ is alright with me so even though chickpeas are not my favorite, except when in hummus form, I knew it was going to be on.ย  I could feel it. I grabbed the Chai Vanilla one since I figured that is a hard flavor to go wrong with.

Each bag is 2 servings but you can eat the whole thing for 220 calories plus your are just munching on naturally roasted, flavored chickpeas so this is a snack that is actually good for you. As we know chickpeas are high in protein and fiber as well as rich in folate, magnesium and iron, so snack on. Anyways the most important part of the snack is it’s taste because even if it’s good for you but the taste sucks, the whats the friggin point? With Chick Pz this is not as issue. These little guys are super tasty and crunchy. I have no doubt that almost everyone who tries them will love them. This is the best thing since hummus to happen to chickpeas, in my humble opinion.

Best part is Chick Pz fit into many different diets and lifestyles. Being free of gluten, soy, dairy and nuts makes them a healthy snack for the masses ๐Ÿ˜‰
