Just typing this makes me realize how badly I need new pans. Note to self…BUY THEM. Anyways, today’s Eco-friendly pans are brought to us by Greenpan. Greenpan is the maker of some awesome, no stick pots and pans that make a wonderful alternative to the PTFE lined ones we see in the stores. By using a super cool non-stick coating called Thermolon which is actually the first environmentally friendly, PTFE-free, non-stick technology since non-stick techno came into play in the 1930’s, Greenpan lets you cook without chemical-leaching worries. Thermolon is actually a mineral based product and it holds up at super high heats allowing you to cook and eat as healthy as possible at all times.

This Cake…Takes The Cake.

I am going to be real honest right now, I have NEVER, EVER, EVER had better baked goods than vegan baked goods. NEVER. Honestly, nothing has even come close to the magic of vegan baking, it leaves me baffled as to why dairy is even needed for baking. But anyways, lets get to the cake because lets face it, everyone loves cake. This particular cake is the ish. Amy’s Chocolate Cake. As simple as it comes and as good as it gets.

This magical loaf cake is an all natural, vegan, no dairy lump of perfection. It also comes in a gluten-free option for those who ride that train. I have tried both the gluten-free and standard versions and they are both awesome. Made from real, simple ingredients, Amy’s parents manage to pack the most moisture into a cake that I have ever come across. The best part of this cake is that no oven is needed. You simply thaw it in the fridge for 2.5 hours before you plan on eating it or serving it and ‘Whoomp There It Is.’

I will leave you with this disclaimer; if you are single, the only one in your house who will be enjoying this cake or just have zero will power, like me, then you may want to invite a friend over or buy a padlock for the fridge because it is utterly impossible to eat just one piece of this cake. There are 6 servings in the box…good luck with that, I am lucky if I can make it into 4 πŸ˜‰

Earth Balance.

As of recently I have become obsessed with Earth Balance. I first tried it a couple of years back and I remember liking it quite a bit but I went back to butter and left it at that. Fast forward to this year, Earth Balance drops this AMAZING coconut oil spread, I get hooked and decided to try the whipped buttery spread again to see whats up. Well whats up is that this stuff was made for people like me. Those people who just do not want to part with butter, those of us who just cannot get down with the falseness. Earth Balance is the closest thing I have found to butter and let me tell you, it tastes so friggin good, its unreal.

Everything that Earth Balance makes is vegan, all natural, gluten-free and they also offer some soy free varieties. Their line of products ranges from buttery spreads to peanut butters and soy milks. I have only used their buttery spread toppings since I have yet to come across their other products anywhere. I take that back, I think I did see their peanut butter at a health food store before but I didn’t try it. I look at products like Earth Balance like this, it’s the little things. Once you revamp your diet from carnie to veg head there will be somethings that you get to keep around like butter, milk, yogurt and cheese. Eventually once you are on this side of the fence for long enough you start to seek alternatives to those products cuz let’s be real ingesting the milk from another animal is kind of weird, right?

Even if you are not a vegan or a vegetarian, even if you are not an animal lover you should try one of Earth Balances products because to put it simply, they taste good and they are good for you. Rich in Omega-3’s and low in saturated fat, you cannot beat what they have to offer. You can find Earth Balance lots of places including Whole Foods, Trader Joe’s and local health food stores.

5 Egg Replacers You Have In Your Pantry.

1- Unsweetened Applesauce. You Will Use Anywhere From 2 Tablespoons To 1/4 Of A Cup Depending On What Your Making.

2- Plain Soy Yogurt. A 1/4 Of A Cup Will Usually Do The Trick In Most Recipes.

3- Potato Starch or Corn Starch. 2 Tablespoons Of Either One Replaces The Egg.

4- Baking Powder and White Wine Vinegar. 1 Teaspoon Of Baking Powder Mixed With 1 Tablespoon Of White Wine Vinegar Is The Magic Combination.

5- Ground Flaxseeds. Simmer 1 Tablespoon Of Ground Flax Seeds In 3 Tablespoons Of Water To Get The Perfect Egg Replacement.

Tasty Treats Review: APIEcalypse Now! Vegan Bakery.

Just the name of this bakery wins, I didn’t even have to try the goodies to know how good they were going to be. APIEcalyspse Now? Yup. They Win. And their baked goods are just as good and unique as the name.Β  I found APIEcalypse Now! at the Toronto Vegetarian Food Festival where the owner, Jenny was shelling out the goods and spreading her vegan baking magic. Based out of the East End of Toronto, these vegan goods are available for purchase online and at two farmers markets in the Toronto area. This stuff is so good I know I will be ordering some via mail cuz unfortunately I cannot make it to Toronto on the reg 😦

At APIEcalypse Now! there are so many things to choose from, that booth was literally overflowing with vegan goodness from marshmallows and cookies to pies and tarts. I tried out a “Magic” Square which was AMAZING. It is that old school 5 layer bar type of thing converted into a cruelty free work of art. Dark chocolate, coconut flakes, pecans, brown sugar, coconut milk layered a top of a graham cracker crust? Yes. Please. I want one so badly right now πŸ™‚ If you live or are visiting the Toronto area be sure to visit them at the Distillery District Farmers Market on Sunday’s from 10am-4pm and at the University Of Toronto Farmers Market on Thursdays from 2pm-5pm.

'Golden' Flax Seeds.

Flax Seeds are seriously a ‘Wonder Food’. Full of short chain Omega 3 Fatty Acids, these seeds are a must have for vegans and vegetarians. You can add them to your yogurt, throw them in trail mix or a stir fry and even add them to baked goods.

Native to India and the Mediterranean Regions of the world, flax comes in both ‘Golden’ and ‘Brown’ colors. Both have the same nutrition profile although brown flax is not as commonly used as golden when it comes to food products. The Omega 3’s that flax seeds contain have been shown to lower cholesterol, especially in women and recent studies have also shown that flax may help patients with breast and prostate cancers.Β  Furthermore, flax may also be beneficial to diabetics since it is known to stabilize blood sugar levels and since it is high in fiber, it is a natural laxative. Packed with good fats that help keep your hair and skin looking good, flax is definitely a ‘something for everyone’ kind of plant.

I have tried getting flax in my diet many ways. I used to just take a supplement but then I could never find one that was not coated in gelatin and it started to become a pain in the butt. Then I went to some milled flax that you can throw on yogurt or into a smoothie. It was good but it was not smooth enough to blend into my smoothie, it changed the texture which changed it all. So then I found this ‘Fine Milled’ golden flaxseed at Vitamin Shoppe and bought them because they looked as if they were milled super fine. And they are. The joys of No Pudge are no secret. Everywhere on the internet people praise this stuff. From diet blogs to chocolate lovers blogs, there is one thing they all seem to agree on. No Pudge is no joke. And No Pudge, ROCKS. If you are like me, and feel that brownies are one of the best inventions ever known to mankind then read on.

No Pudge is the ultimate ‘diet’ brownie, fat-free and all natural, only 120 calories yet moist and perfect. How this came to be is beyond me. Most fat-free treats tend to taste similar to well, nothing and tend to have the texture of rubber. Besides No Pudge, I honestly don’t even mess with fat-free baked goods, they always let me down and leave me wanting more. And when it comes to dessert you don’t want to be left feeling unfulfilled, whats the point of even eating it then?

The taste of No Pudge is rich and chocolatey. Since there is only all natural 8 ingredients in the mix (Pure Cane Sugar, Unbleached Wheat Flour, Dutch Cocoa, Egg Whites, Cornstarch, Wheat Gluten, Salt and Baking Soda) there is no chemical taste or worries about trans fats and hydrogenated oils. I don’t think there is an easier dessert to make on the market, all you do is preheat the oven to 350. Pour the mix in a bowl, stir in 1 store-bought size thing of fat-free vanilla yogurt, applesauce, soy yogurt or silken tofu (2/3 of a cup) and mix together. Spread it into pan or cupcake tray that has been sprayed with cooking spray. Spray generous since these puppies can and will stick due to the lack of fat. Cook them for 30-35 minutes and you will have some of the best brownies ever. For only $3.99 you can’t beat it either. If you have no self-control, like me, then they also include microwave directions to just make one brownie at a time. I don’t know how this works since I have never made or ate just one of these damn things πŸ˜‰
