Recipe Time: No Bake Cocoa-Almond Vegan Cookies.

What’s easier and/or better than no bake cookies? These dairy-free gems are ready to go in under an hour, this recipe makes about 3 1/2 dozen cookies. Each cookie has 95 calories, 6 grams of fat, 2 grams of protein and 1 gram of fiber. Enjoy 🙂

No Bake Cocoa-Almond Vegan Cookies.

Ingredients:

– 1 Cup Natural Cane Sugar.

– 6 Tablespoons Unsweetened Cocoa.

– 1/2 Cup Coconut or Almond Milk.

– 1/2 Cup Virgin Coconut Oil.

– 1/4 Teaspoon Sea Salt.

– 3/4 Cup Almond Butter.

– 2 1/2 Cups Quick-Cooking Oats.

– 1/2 Cup Unsweetened Shredded Coconut.

– 1 Tablespoon Vanilla Extract.

Directions:

– Mix sugar, almond milk, coconut oil, cocoa and salt in a large saucepan over medium high heat.

– Bring to a boil and proceed to boil for 90 seconds, stirring constantly.

– Remove from heat and stir in almond butter, oats, coconut and vanilla.

– Drop by rounded teaspoons onto parchment paper, flattening slightly.

– Chill for 30 minutes to set and store in the refrigerator.

Earnest Eats.

One of my most recent healthy snack discoveries come from Earnest Eats. And they rock. Earnest Eats is a wonderful little company who makes all natural, wheat-free, healthy yet tasty snacks such as baked whole foods bars and granola planks. And from what I can tell all of their offerings are also vegan 🙂

I happen to come across a box of these guys while waiting in line at T.J. Maxx. You all must think I live at that place, from dog treats and shampoos to human treats and shampoos I am always scoring at T.J. Maxx and reporting back lol. Anyways, there are 6 bars in each box of whole food bars, those are what I came across. I went with the choco peanut butter and I also saw a cranberry lemon zest one next to it which I am going to have to go back and pick up because this one I had was amazing. Packed full of good foods like almond butter, whole oats and dark chocolate chips, the texture was perfect and the taste was outstanding.

Earnest Eats are snacks for the healthy at heart who are on the go. There is no need to load up on junk food when you can stock you car and purse with goodies like this…

My first introduction to Justin’s products was a dark chocolate peanut butter cup I grabbed at Whole Foods one day because it was all natural and organic. I noticed there was also a milk chocolate version but I did not grab it. After I ate the amazing peanut butter cups I went on their website to see what was really good with this company. Turns out, it’s all good at Justin’s.

Founded by Justin himself, they make delicious, all natural, organic nut butters. Original Peanut, Chocolate Peanut, Honey Peanut, Chocolate Hazelnut, Almond, Chocolate Almond, Honey Almond and Maple Almond. They only use the best, locally found ingredients in their products and they strive to keep their batches small and quality high. At Justin’s they work with integrity and only agree to work with companies who share the same moral grounds. They aim to keep their carbon foot print low and are always looking for ways to be more environmentally friendly.

As far as their products go, they are amazing. I found their Chocolate Hazelnut Butter at Kings and bought it immediately with 2 apples. To die for. If you like Hazelnut and Chocolate. You can spread it on anything from waffles to fruit. It is a great way to get  your chocolate fix, plus you get a bunch of healthy fats from the nuts. Justin’s nut butters are not too sweet and not too salty, the balance is perfect and you can really taste the ingredients. Plus the people who work for Justin’s all seem to be super cool, the kind of business we can all feel good supporting 🙂

The Best Vegan Protein Bar Ever. Ever.

22 days is all it takes to make or break a habit. This is the mantra of one of the most delicious vegan protein bars ever. Daily Mocha Mantra is this amazing creation I came across at Vitamin Shoppe a couple of months ago. Since I eat a protein bar everyday I am constantly looking for something new, the less ingredients the better but don’t get me wrong. It MUST taste good. Life is too short to eat things you do not enjoy 😉

I think I can safely say I picked up this vegan protein bar because it has a huge number 22 on it, which is my favorite/lucky number. I bought it because it was an all natural vegan protein bar, made with dark chocolate, almond butter and hemp protein. I love it because it is one of the most decadent things I have ever eaten. This is not like any other protein bar, I feel that calling it a protein bar is actually, unfair. This bar is rich, loaded with dark chocolate and bursting with mocha flavor. The coffee flavor in this bar is intense which is not surprising since it is made with organic coffee.

I find this Daily Mocha Mantra the most enjoyable way to get a quick 10 grams of protein in my day and kill my chocolate craving all at once. With 200 calories, 12 grams of fat and 5 grams of fiber, this bar really does fill you up. On top of being vegan, this bar is also free of soy and gluten. There ae many other flavors besides the Daily Mocha Mantra, this is just the one I am stuck on.
