Recipe Time: Caribbean Coconut Rice.

This delicious rice makes the perfect side dish to anything. It really shines with Asian or Caribbean influenced foods but lets fact it, it’s coconut rice, it will taste good no matter how, when or where you eat it ๐Ÿ™‚

Caribbean Coconut Rice.


– 2 Teaspoons Of Unsalted Butter.

– 2 Teaspoons Of Minced Fresh Ginger.

– 1 Clove Of Garlic, Minced.

– 1 3 Inch Cinnamon Stick.

– 1 Cup Jasmine Rice, Rinsed And Drained.

– 3/4 Cup Light Coconut Milk.

– 1 Teaspoon Sugar.

– 1/2 Teaspoon Salt.

– 1/4 Teaspoon Grated Lime Zest.

– 1/8 Teaspoon Pepper.

– 1/4 Cup Shredded, Unsweetened Toasted Coconut (Optional)


– Melt Butter In Saucepan Over Medium Heat. Add Ginger, Garlic And Cinnamon Stick And Satue For 1 Minute Or Until Fragrant.

– Stir In Rice And Saute 2 More Minutes Or Until The Rice Grains Are Opaque.

– Add Coconut Milk, Sugar, Salt, Lime Zest, Pepper And 3/4 Cup Of Water And Bring To A Simmer.

– Stir Once, Cover, Reduce Heat To Low And Simmer For 15 Minutes.

– Fluff Rice With A Fork, Cover And Let Rest For 5 Minutes.

– Garnish With Toasted Coconut And Serve.
