Recipe Time: Whole Wheat Linguine With Saffron And Roasted Red Peppers.

Linguine.

Here is another simple yet healthy pasta dish that is all said and done in 30 minutes. Easy to make mid-week when you are feeling tired and uninspired 🙂 This recipe serves 4 and has 357 calories, 14 grams of protein, 12 grams of fat (6 grams mono and 1 gram poly, the good fats) and 5 grams of fiber.

Whole-Wheat Linguine With Saffron And Roasted Red Peppers:

– 8 oz Of Uncooked Whole-Wheat Linguine.

– 2 Tablespoons Of Extra Virgin Olive Oil.

– 1 Medium Red Onion, Cut Into Thin  Rings.

– 1/4 Teaspoon Saffron Threads, Crumbled.

– 1 Garlic Cove, Minced.

– 1 Cup Of  Jarred Roasted Red Pepper Strips.

– 2 Teaspoons Of Capers Drained.

– 1 Teaspoon Of Red Wine Vinegar.

– 1/2 Teaspoon Fresh Thyme Or 1/4 Teaspoon Dried Thyme Leaves.

– 1/4 Teaspoon Of Sea Salt.

– 1/8 Teaspoon Of Fresh Ground Pepper.

Directions:

1- Cook pasta according to directions, Reserve 1/2 cup of the cooking liquid then drain the pasta.

2- Heat the olive oil in a large non stick skillet over medium heat. Add onion and saffron and cook until the onions are soft. About 5 minutes, stirring frequently.

3- Add garlic and cook until fragrant, about 30 seconds, stirring constantly. Stir in bell peppers, capers, vinegar, thyme, salt and pepper. Cook until heated through, about 4 minutes, stirring occasionally.

4- Add the pasta and the reserved liquid to the sauce in the skillet and cook until heated through, about 2 minutes, stirring constantly.

5- Transfer to serving bowls and serve immediately.
