Even If You Don't Like Veggies, You Will Like This Recipe.

This recipe from ‘Sara Foster’s Southern Kitchen’ cookbook  just screams this time of the year to me. Most of these veggies can be found at your locals farmers market through out the summer months. The pesto really adds a nice flavor to the grilled veggies and I mean who doesn’t like pesto? This recipe says it serves 6, each serving size being 2 skewers but this is grilled veggies were talking about and there are only 190 calories per serving making each skewer under 100 calories.  So if you want to eat 3 or 4 go for it 🙂 These veggies skewers are best served warm over a whole grain like quinoa or brown rice with the additional vinaigrette on the side. With 4 grams of fiber and 5 grams of protein these veggies will fill you up without weighing you down, making them the perfect summer grill food.

Farm-Stand Grilled Vegetable Skewers With Pesto Vinaigrette.

Ingredients:

– 1/4 Cup Olive Oil.

– 1/4 Cup Jarred Pesto Sauce.

– The Juice Of One Lemon.

– 1/2 Pound Of Okra.

– 2 Bell Peppers. One Red And One Yellow.

– 1 Red Onion.

– 6 Small Summer Squash.

– 1 Cup of Cherry Tomatoes.

– 1 Cup Of Fresh Sage Leaves.

– 1/2 Teaspoon Salt.

– 1/2 Teaspoon Black Pepper.

Directions:

If You Are Using Wooded Skewers Let Them Soak For About 15 Minutes In Water While You Prepare The Vegetables.

Preheat Gas Grill To Medium.

– Combine The Olive Oil, Pesto And Lemon Juice In A Small Bowl. Whisk Thoroughly And Set Aside.

– Cut Okra Into Small Chunks And Remove The Stem Ends.

– Core And Seed The Peppers, The Cut Them Into 2 Inch Wedges.

– Cut The Onion Into 2 Inch Wedge Sections.

– Alternate Vegetables By Flavor And Color And Add A Fresh Sage Leaf Between Every 3 Veggies. Be Sure To Leave Room At The End Of The Skewer So You Can Handle It.

– Brush The Skewers With The Pesto Vinaigrette And Season Evenly With The Salt And Pepper.

– Grill Skewers About 4 Minutes Each Side, Until Veggies Are Slightly Charred But Still Crisp Tender.

– Remove From Grill And Serve Warm.
