Sweet Potatos Are The Perfect Side For This Burger.

Black bean burgers are the bomb. There are so many different ways to make them but this recipe seems simple and tasty. It is not vegan since it requires one egg white but vegans are slick, so I am sure they will have a substitute for it with no problem 🙂 This bean burger is PACKED with fiber (11 grams) and protein (21 grams) showing us all that wimpy burgers and vegetarians do not go hand in hand. This dinner will be prepared, cooked and ready to eat in about a half hour.

Black Bean Burger.

Ingredients:

-6oz of mushrooms quartered.

-1/2 of a red onion quartered.

-6 tablespoons of whole wheat bread crumbs.

-2 cloves of garlic.

-1 jalapeno pepper seeded.

-1 egg white.

-2 teaspoons of reduced sodium soy sauce.

-1 can of black beans, rinsed and drained.

-1 tablespoon of canola oil.

-4 whole wheat sandwich rolls toasted.

-4 lettuce leaves.

-1 small tomato sliced.

-4 slices of reduced fat pepper jack cheese, optional.

Directions.

1- Combine mushrooms, onion, cilantro, bread crumbs, garlic, pepper, egg white and soy sauce in a food processor. Process until finely chopped, add beans then pulse until coarsely chopped. Divide the mixture in 4 parts and form into patties.

2- Heat the canola oil in a large frying pan over medium heat. Brown the burgers, 3 minutes on each side.

3- Top each burger with cheese if desired. Cover the pan and melt the cheese for about 4 minutes.

4- Put burgers on rolls and top with lettuce and tomato.
