Did You Know That Butternut Squash Is Actually A Pumpkin?

Apples, rice and butternut squash are three of my favorite foods. When I came across this recipe in my latest issue of VegNews I just had to share it. The whole recipe from start to finish should take about 40 minutes and this particular recipe serves ten. Perfect for company or for lunch the next day. Since squash, wild rice and apples are all high in fiber, this is one meal that will fill you up but yet manage to taste great. This dish is 100% vegan 🙂

Wild Rice With Apples And Butternut Squash.

Ingredients:

-1 1/2 Cups Of Wild Rice Blend (Lundberg Is An All Natural, Vegan Friendly Option.)

-1/2 Cup Fresh Parsely Chopped.

-2 Tablespoons Of Olive Oil.

-1 Medium Onion, Chopped.

-3 Cups Of 1/2 Inch Cubes Butternut Squash (Look For A 2lb Squash.

-2 Granny Smith Apples, Unpeeled, Cored And Cut Into 1/2 Inch Cubes.

-1 Tablespoon Dried Thyme.

-1 Cup Of Water Or Vegetable Broth.

-1/2 Cup Walnut Pieces.

Directions:

-Heat Oil In A Large Skillet and Saute Onion Over Medium-High Heat Until It Is Translucent.

-Add In Squash, Apples And Thyme And Saute For 5 Minutes.

-Stir In Water Or Broth.

-Combine The Cooked Rice, Parsely, And Sauteed Mixture Into A Buttered 9×13 Baking Dish.

-Sprinkle Walnuts On Top.

-Bake at 425 For 20-25 Minutes.
