I am obsessed with sweet potatoes and I wish I had started eating them on the regular a long time ago. The only time I used to eat them was during the holidays at Grandma’s house where they were smothered under layers of marshmallows. Ah those were the days
Now a days the marshmallows are gone and Grandma has moved to Florida but the sweet potato has not only stayed but flourished in my life. They are easy to make and a great source of complex carbs. An amazing source of Vitamin A and Beta Carotene, they also serve up a nice dose of Vitamins B5 and B6. I tend to just throw a couple in the microwave for 10-15 minutes, remove the skin and mash them with a fork and some cinnamon and agave. Simple. Easy. Healthy and delicious. Since variety is the spice of life here are 4 easy and tasty ways to serve up sweet potatoes.
1- Add A Little Spice.
Bake the sweet potato and top with a spicy salsa, serve with a spicy black bean burger (Morning Star Farms makes the best ones)
2- Spicy Sweet Potato Wedges.
Cut into wedges and toss with olive oil, cayenne pepper and paprika then bake until crisp.
3- Sweet Potato Chips.
Thinly slice one sweet potato then spray with olive oil cooking spray and sprinkle with sea salt, pepper and fresh rosemary. Bake in the oven at 425 until browned and crisp.
4- Healthy, Satisfying Salad.
Bake a sweet potato, let it cool and dice. Add to baby spinach, cooked quinoa (buckwheat, brown rice or whatever grain of your choice) and some walnuts and raisins.
